The idea of “La Bolognese con Bottega” brand comes from the old recipes of the Italian peasant traditions. It is a gastronomic brand created to consign the secrets of the Antica Osteria del Mirasole restaurant, together with Caretti’s farm and Sant’Angelo’s dairy factory cuisine and traditions, always committed to maintain a severe attachment to the homemade aspect and the taste and flavors of Emilia-Romagna region.
After months of research and tests, chef Cimini has achieved to create a formula that gathers in an elegant gift box the ingredients needed to realize at home two of the most famous Italian dishes.
These two traditional recipes are based on high quality Parmgiano Reggiano cheese from the self sustained Caretti’s family farm, but are mainly the result of a passionate research that chef Cimini made around the territory, certified by the testimonies of old makers of these masterpieces of Italian cuisine, who are called in Bolognese tradition “sfogline” or “rezdore” (women dough makers).

Tortellini alla crema di latte (Bolognese cappelletti with heavy cream sauce) is the refined match, casually occurred, between the raw heavy cream (rising of the milk cream) and the naturalness of Parmigiano Reggiano cheese, together with the tortellino (Bolognese cappelletti), the typical dish served during the feast days of the Emilia-Romagna region. Tortellino is the most famous delicacy among the Italian cuisine excellences. It is a stuffed egg pasta composed of a square of pasta with specific dimensions and a delicious meat stuffing, made according to the most ancient and original recipe. The original recipe was registered in 1974 by the “Confraternita del Tortellino” at the Chamber of Commerce, Industry and Craftsmanship of Bologna, in order to identify its uniqueness among the several variations.
From the stories told by many old dairy families of Emilia-Romagna region, it seems that a part of the salary earned at the dairy was composed with products of the dairy itself: cheese, butter, ricotta cheese and heavy cream. Therefore, thanks to the availability of these products in the peasant families cuisine, they started to cover the dish of the traditional Tortellino Bolognese with a veil of this precious and tasty cream called “crema di latte” (raw milk cream).
