Caretti’s farm is constantly in evolution for what concerns the production of Parmigiano Reggiano cheese thanks to the continuous attention to the closed loop agricultural system and the high quality of the production chain, which starts from the forage cultivation up to the final product.

Since 1966 the milk manufacturing to produce Parmigiano Reggiano has been moved to a new and modern building in order to optimize all the aspects and steps of the production of this unique and inimitable dairy product.

Soon the results have confirmed once again the importance of working in symbiosis with the environment.

Because of its constant and remarkable attention to the product quality, Sant’Angelo’s dairy is among the first in the province to have obtained UNI EN ISO 9002/1994 certificate (quality system certificate) for the production and maturation of the Parmigiano Reggiano (CERT-02279-97-AQ-BOL-SINCERT from 10.31.1997), Quality Management System subsequently aligned to UNI EN ISO 9001/2008 requirements.

Since 12.28.2001 Sant’Angelo’s dairy has obtained UNI EN ISO 14001 certificate (the environmental management system certificate CERT-317-2001AE-BOL-SINCERT), that defines the Environmental Policy with the aim of achieving continuous improvements on the environment. Sant’Angelo’s dairy achieved also the first Emas registration (Reg. CE n.761/2001) in 2002 (registration nr. I 092 from 06.07.2002) that is still valid.

According to the short production chain philosophy, from 2006 the maturation room of the Parmigiano Reggiano (that can house about 30.000 wheels of parmesan) is completely self-sufficient for what concerns the energy system needs, thanks to more than 1.000 sq.m. of photovoltaic panels mounted on the building roof.

We are conscious that only if we stand in harmony and symbiosis with nature we can be sure that the future generations will not deny the past.
