The Antica Osteria del Mirasole restaurant
The Antica Osteria del Mirasole restaurant was born on 1989 from a Franco Cimini’s idea (chef and owner), who wanted to realize a place with antique and rustic touch, that looks like his traditional and genuine cuisine.
At 22nd years old, by following the lines of the Osteria del Mirasole, a local restaurant existing during the Second World War, he reproduced the ambience, but enriching and personalizing it during the years with pictures, antique instruments and ornaments.
In order to complete the warm and cozy atmosphere, he built in one of the two rooms a fireplace where chef Cimini virtuously cooks with scented wooden, genuine and healthy meat courses coming from the surrounding farms.
The main aspect of Franco Cimini’s cuisine is the authenticity and simplicity of the flavours. The concept that the chef wants to transmit is the importance of using excellent and selected ingredients that do not need much elaborations, but only a simple enhancement.
The perfect union between cuisine and the love for the simple things found its completion in Anna, who is his companion and room attendant at the restaurant since 10 years. Anna, thanks to her family self sustained farm, supplies to the restaurant high quality raw material like Parmigiano Reggiano cheese, butter, ricotta cheese, fresh heavy cream and meats of their own animal friendly breeding farm.
The result is dishes of ancient times food with character but at the same time cozy like the hug of a mother.
At the Antica Osteria del Mirasole restaurant are proudly served two special pasta dishes from the most genuine tradition of the Emilia-Romagna region cuisine: Tortellini alla crema di latte (Bolognese cappelletti with heavy cream sauce) and Tagliatelle all’antico ragù di cortile (fresh fettuccine with an old recipe of Bolognese sauce).
These two traditional recipes are based on high quality Parmgiano Reggiano cheese from the self sustained Caretti’s family farm, but are mainly the result of a passionate research that chef Cimini made around the territory and certified by the testimonies of old makers of these masterpieces of Italian cuisine, who are called in Bolognese tradition, “sfogline” or “rezdore” women dough makers.
