Since more than 25 years Franco Cimini chef, who is a member of the Chef to Chef Association (born from the idea of the Italian chefs Igles Corelli and Massimo Bottura, with the aim to promote the regional gastronomic evolution and its confirmation at local and international levels), runs the restaurant named Antica Osteria del Mirasole located in Italy at San Giovanni in Persiceto, a small city located at the heart of Emilia-Romagna Region, between Bologna and Modena.
The success of Antica Osteria del Mirasole restaurant is represented by Cimini’s great passion for the genuine quality of the row materials and products that nature offers. The menu dedicates a wide space to the dishes of the Bolognese tradition. In particular, there are the Tagliatelle al ragù di cortile (fresh fettuccine with an old and secret recipe of Bolognese sauce) and Tortellini alla crema di latte (Bolognese cappelletti with heavy cream sauce) and 30 months of seasoning Parmigiano Reggiano cheese. These recipes keep receiving the customer’s appreciation even though tagliatelle and tortellini are probably the most ancient and classic dishes of Bolognese cuisine.
